Cheesy, broccoli baked potatoes! These are super easy to make and taste delicious. Just poke some holes in the potatoes, bake them, top them with your broccoli and cheese and finish cooking until the potatoes are nice and soft.

Sharing some Greek Mediterranean style chicken thighs that I made a few weeks ago. These turned out amazing and were super good leftovers as well.

Since I can bake more than just desserts, I figured I’d share some of the other things I make too. Also, because I cook a lot of food for my family and I only have so much time to bake. So expect to see a variety of baked goods and other things that you can eat on this page too!

Tangy lemon and raspberry/bumbleberry bars

Start by mixing 1 stick of softened butter with brown sugar and lemon zest until creamy. Add flour, rolled oats, baking powder and salt until mixed well. Reserve a little bit of the mixture and then press the rest into an 8 inch cake pan and top with jam (I used a mix of raspberry and bumbleberry jams). Sprinkle with the reserved crust mixture and bake for 25 min at 350 degrees.
